Omelette in a tortilla with cottage cheese and spinach
            ingredients
Malta kafija Jacobs Selection 500g
1 Whole grain tortilla (medium, 62 g)
3 Small eggs
160 grami RIMI Classic cottage cheese (or similar)
100 grami Cherry tomatoes
50 grami Cheese 10% (or other lean cheese)
20 grami Spinach
3 grami Oil
Salt, pepper, spices of your choice

Mix the eggs with the cottage cheese, grated 10% cheese, spinach, and spices in a bowl.

Grease the pan with oil and place the tortilla in it (the edges should curl up slightly, forming a "bowl").

Place the cut tomatoes on the tortilla, pour the omelette ingredients on top, spread evenly, cover the pan with a lid and cook over very low heat until done (about 15 minutes, until the centre is set).

Remove from heat and allow to cool slightly.
