Pumpkin Loaf Cake with Dried Fruit and Walnuts

A delicious and healthy treat made with whole grain flour, sugar-free and fat-free!

Pupiņas Kok tomātu mērcē 400g/240g

3 Mazas olas

80 grams Olu baltums

200 grams Svaigs ķirbis

190 grams Žāvēti augļi/ogas (man aprikozes, žāvētas dzērvenes, rozīnes)

150 grams Kefīrs (2%)

150 grams Pilngraudu kviešu milti

40 grams Rieksti (man valrieksti)

1 tējkarote Soda

1 Apelsīna sula

  1. Kefir is punished and left to act.

  2. Grate the pumpkin on a fine grater.

  3. Whisk the eggs with the egg white. 

  4. Add the grated pumpkin, flour, and spices.

  5. If necessary, chop the dried fruit/berries and add them to the dough.

  6. Place the dough in a baking tin and bake in an oven at ~160-170 °C for ~50-90 minutes. The baking time depends on the size of your baking tin. My baking tin is 10 x 25 cm. After ~20 minutes, cover the tin with foil to prevent the top from burning. Remove the foil before the end of baking.

  7. 10 minutes before the end of baking, remove the loaf cake from the oven, sprinkle with orange juice and return to the oven.
