Pumpkin muffins with cheese and sun-dried tomatoes

I had a piece of pumpkin and some cheese. I baked them into delicious muffins.

3 Eggs

400 grami Pumpkin

125 grami Cheese with hemp seeds

100 grami Kefir 2%

80 grami Flour (I use corn flour)

30 grami Sun-dried tomatoes

15 grami Dill

15 grami Garlic

8 grami Parsley

1 tējkarote Baking powder

Salt, pepper to taste

preperation

  1.  Preheat the oven to ~175 °C.

  2. Grate the pumpkin on a fine grater.

  3. Add the eggs, finely chopped sun-dried tomatoes and the remaining ingredients and mix well.

  4. Place the batter in the muffin tins.

  5. Place in the oven and bake for ~40 minutes.
