Stew of Vegetables, Turkey Fillet and Mushrooms in Coconut Milk

600 grami Turkey or chicken fillet

688 grami Butternut squash

354 grami Courgette

335 grami Bell pepper (paprica)

250 grami Mushrooms (I used champignons)

168 grami Carrot

152 grami Onion

120 grami Tomatoes cherry

100 grami Rice (I had basmati rice)

35 grami Spinach

20 grami Garlic

1 Chilli pepper

250 grami Coconut milk 18% (or sweet cream 10-15%)

  1. Cut the vegetables: zucchini, bell pepper, pumpkin, carrot, chilli pepper.

  2. Cut the turkey fillet and mushrooms into strips. Place in a pan and fry in 3 g of oil (until the water evaporates). Set aside.

  3. Pour water into a pot, bring it to a boil, and add rice (which has been rinsed beforehand to remove starch). Boil for about 15 minutes, add the cut vegetables, salt, spices, and simmer/saute everything over low heat until ready.

  4. At the very end, add coconut milk, tomatoes, and spinach. Bring to a boil.
